PINEAPPLE UPSIDE DOWN DONUTS

Pineapple Upside Down Donuts taste just like the cake, in donut form! These baked donuts are moist & cake-like with a sweet pineapple brown sugar topping. Delicious for breakfast, or try them warm with a scoop of ice cream on top for dessert!

It’s donut o’clock! Which is pretty much my favorite time of day – all day//everyday. I just can’t get enough donuts. I love them! And these pineapple upside-down donuts are sure to be a new favorite near and far! Sticky, sweet, and ready in less than 20 minutes… these are a dream come true for donut lovers everywhere!


Growing up, donuts were definitely a thing in our house. As in every Sunday, they were kind of expected. As in if we didn’t have them, we couldn’t help but wonder if we were had done something wrong. Because Sunday just wasn’t Sunday without them!

Looking back, I realize we were kind of spoiled. At least when it came to donuts. I mean – what type of kids come to expect donuts on the weekly? Definitely not mine. My kids can probably count on two hands the number of times we’ve gotten them donuts for breakfast. But you know what? I kind of love it.

An incredibly easy donut base gets an upgrade thanks to a thin slice of pineapple and a hearty sprinkle of brown sugar. The pineapple and brown sugar bake into the top of the donut, and like magic, you’ve made an incredible little treat in a jiffy! These donuts are proof that a lot of flavor can come from just a few basic ingredients. Who doesn’t love that?

INGREDIENTS:

  • 2 cups self rising flour (if using all purpose, add 2 tsps baking powder, ½ tsp baking soda, & ½ tsp salt)
  • 2 large eggs
  • ⅔ cup packed light brown sugar
  • 1/4 cup milk
  • 1/4 cup pineapple juice (from the can of pineapple rings)
  • ½ cup sour cream
  • 4 tablespoons unsalted butter, melted
  • 3 teaspoons vanilla extract
  • extra brown sugar, for sprinkling
  • 1 can of pineapple rings, carefully sliced in half lengthwise to make the rings thinner
  • jarred maraschino cherries (optional, but cute)

DIRECTIONS:

  1. Preheat the oven to 350 degrees.
  2. Spray your donut pans with nonstick cooking spray. Beat together the eggs, brown sugar, milk, pineapple juice, sour cream, melted butter, & vanilla extract. Gently mix in the flour until just combined In the donut cavities, sprinkle about 1 scant tablespoon of brown sugar. Lay half a pineapple ring in each one (sliced in half carefully lengthwise so the cake/fruit ratio is even). Spoon the batter over the pineapple rings.
  3. Bake for 8-10 minutes. Cool for 10 minutes in the donut pan on a wire rack. Then turn them upside down to flip the pineapple upside down cake donuts out. Garnish each donut with a cherry in the middle.
