VALENTINE’S DAY SUGAR COOKIES

All of the cute little pink and red candies and cookies and clothing and decor and…well…everything is out in full force in the stores now.

I figured it was high time that I popped in with a cute little Valentine’s Day recipe for you guys!

I’m the least crafty person out there, so my version of a Valentine’s Day cookie is probably different than some people’s version – there is no intricate royal icing design, nothing coated in candy melts, and there is definitely no longer than 20 minutes involved in this whole recipe from start to finish.

I’m here for you, busy moms. Let’s tackle Valentine’s Day as easily and as tastily as possible. 😉

I hope you’re ready to see a LOT of sugar cookies, because I got on a roll decorating these Valentine’s Day sugar cookies. First I couldn’t stop making different designs, then I couldn’t stop photographing them. (Then I couldn’t stop eating them, but that’s a tale for another day.) I just couldn’t narrow down my favorite designs and leave some out in the cold, so I’m sharing them all with you and you can pick and choose your favorites to recreate!

These Valentine’s Day Sugar Cookies are classic cookies in every sense of the word. They’re a basic roll-out sugar cookie, lightly flavored with vanilla (or almond, or lemon…baker’s choice!) and baked until golden around the edges but still soft in the middle, and topped with royal icing. They’re exactly what you think of when someone says “sugar cookies.” Sure, they’re not ground-breaking, but they’re the perfect blank slate for playing around and experimenting with different royal icing decorating techniques.

INGREDIENTS

  • 8 tablespoons salted butter melted
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1 2/3 cups all purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup Valentine's mix M&Ms
  • 1/2 cup white chocolate chips

INSTRUCTIONS

  1. Preheat oven to 350 degrees.
  2. Add the melted butter, brown sugar, and granulated sugar to the bowl of a stand mixer and beat until well combined.
  3. Beat in the egg and vanilla extract.
  4. Dump in the flour, baking soda, and salt. Mix until combined. Dough will be soft.
  5. Stir in the candy and white chocolate chips.
  6. Use a large cookie scoop to scoop out 12 balls of dough.
  7. Bake for 10 minutes exactly. Do not overbake. Cookies may look a bit underdone, but they will set up as they cool.
  8. Let cookies set on the baking sheet for at least 5 minutes before eating.
  9. Store, tightly covered, for up to 5 days.
