Glazed Pumpkin Sugar Cookies

More pumpkin coming your way today! In the form of deliciously soft-baked pumpkin sugar cookies. These glazed pumpkin sugar cookies were single handedly the downfall of my diet for the day. I’ve said it before but sugar cookies of any kind are my weakness. Like I literally lose whatever self control I have around them.

I’ve been really good about eating my salad for lunch each day but the day I made these cookies I realized that I had eaten quite a few of them so I decided to call it lunch. I know, not healthy in the least bit but man oh man are they delicious.


The cookie dough alone is so tempting. The recipe as is makes about 4 dozen cookies and I was only able to get about 3 dozen because my little girl and I kept taking finger swipes of the dough. It’s really good. Do yourself a favor and try the cookie dough.

I know some may not like the idea of raw cookie dough but if eating raw eggs were that bad for you then I’d be dead by now, haha 🙂 But seriously, you know if the dough is that good then the cookies have got to be amazing.

Ingredients

  • Pumpkin Sugar Cookies
  • 1/2 cup (1 stick) butter, softened
  • 1/2 cup canola or vegetable oil
  • 1/2 cup pure pumpkin
  • 1 cup granulated sugar
  • 1/2 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 2 large eggs
  • 4 cups all-purpose flour
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon cream of tartar
  • 1/2 teaspoon salt
  • 1/2 teaspoon pumpkin pie spice
  • Pumpkin Spice Glaze
  • 2 cups powdered sugar
  • 3-4 tablespoons heavy cream
  • 1/4 teaspoon pumpkin pie spice

Instructions

  1. Heat oven to 350 degrees. Line cookie sheets with parchment paper, baking mats, or spray with cooking spray.
  2. In a large mixing bowl, add softened butter, oil, pumpkin, sugars, vanilla and eggs. Use a hand held blender (or in the bowl of a stand mixer) and blend together until smooth and combined.
  3. Add the flour, baking soda, cream of tartar, salt, and pumpkin pie spice. Blend together on low speed just until combined and no flour streaks remain.
