KETO MCGRIDDLE SANDWICHES

This low carb twist on the quintessential fast food breakfast sandwich is pure perfection. What could possibly be better than an entire American breakfast all wrapped up in one sandwich, with only 2 net carbs??You can make these sandwiches with any combination of fillings that you like or even just eat the “buns” for a less messy pancake.  I personally think that there isn’t anything better than bacon, egg and cheese with sausage as a close second 🙂

UPDATE: I Recently came up with an even easier way to make these McGriddles, which I added to the recipe card. The video shows the new, easier way, but either way is delish!

To ensure that the pancake “buns” came out uniform and round I baked them in a whoopie pie pan, if you don’t have one of these laying around, you can use small mouth mason jar lids. Whichever you use, just be sure to grease it really well!


Remember when McGriddles came out? Maybe I’m dating myself just a bit--but when I was a young teenager and those bad boys were released into the world, they became my new go-to breakfast favorite (and coming from a family that frequently ate fast food when I was a kid, that’s a pretty big deal).

I hope that the recipe developer behind McGriddles made millions, because they nailed a perfect combination of flavors. Those sweet little pockets of maple… the subtle spice from the sausage patty… the perfect softness of the folded egg… and of course, that ooey gooey slice of American cheese. I would venture it’s one of the greatest fast food inventions of all time.

But when you’re on keto, it’s easy to think that cool menu items like McGriddles are simply off the table forevermore (probably because the original version has 45 grams of carbs). Not anymore! I tested dozens of pancake prototypes to get you the perfect maple-infused flavor while keeping the macros keto-friendly. They have just enough fluff to mimic a griddle cake without falling apart.


I tried to keep these Keto Sausage McGriddles as true to the original version as possible, with one exception: the egg. McGriddles normally come with a folded egg, which I recently learned has a lot of weird additives including maltodextrin (which can spike your blood sugar). If you’re making a keto-friendly McDonald’s run, avoid the folded egg and get a fresh cracked whole egg (which they are always happy to substitute when a menu item normally calls for folded eggs).

INGREDIENTS

  • 9 large eggs, divided
  • 1 (8-oz.) block cream cheese, softened to room temperature, cut into cubes
  • 1 tsp. maple extract
  • 1 tsp. pure vanilla extract
  • 1 1/2 c. almond flour
  • 2 tsp. baking powder
  • 1 tsp. kosher salt
  • Butter, for pan
  • 4 pieces bacon, cooked
  • 1 tbsp. heavy cream
  • Freshly ground black pepper
  • 4 slices American cheese

DIRECTIONS

  1. In a medium bowl, whisk together 4 eggs, cream cheese, maple extract, and vanilla. Add almond flour, baking powder, and salt. 
  2. In a medium nonstick skillet, melt butter. Add about ¼ cup of batter to pan and cook, 3 minutes, then flip and cook another 3 minutes or until golden and cooked through. Repeat with remaining batter. 
  3. In a small nonstick skillet, melt butter. In a small bowl whisk together remaining 5 eggs and heavy cream. Season with salt and pepper. Pour about ¼ of eggs into skillet. Let cook 1 minute, then fold edges into the center to create a small circle. Repeat with remaining eggs. 
  4. Place eggs on top of a griddle cake, then cheese and a slice of bacon and top with another griddle cake.
