Biscuits and Gravy with Sausage and Egg Breakfast Casserole

I’m sure you’ve heard of biscuits and gravy casserole, right? This version of that popular breakfast casserole is filled with eggs, cheese and sausage in addition to the biscuits and gravy!  It’s a perfect breakfast casserole recipe for lazy Sunday mornings with the family and it’s even better when doubled for large groups.  Bonus: this Egg Casserole can be assembled the night before for practically no morning prep!

You could even throw some green peppers and onions in here too. Mmm. Mmm. So many options! You could switch out bacon for the sausage. Whatever your family loves!
Did I mention I hosted Thanksgiving week for my family this year?  The deal was, hubby and I went on a trip the week prior to Thanksgiving and my parents would stay at our house and take care of the kids.


Then after returning from the trip, I would host our family for Thanksgiving…  So yes, 28 people for the Thanksgiving meal plus 12 – 19  overnight guests spread throughout the week and weekend! (Lots of  kids though,  so it wasn’t too difficult to squeeze them in.)

I’m sure you can imagine the amount of food we went through.

Cook’s Notes: You can prepare this the night before and pop it in the fridge. Then the next morning, put it into the oven to bake. It may need more baking time because the mixture will be cold.

Ingredients

  • 12 oz  refrigerated biscuit, 1 tube (340 g)
  • 6 eggs
  • ½ cup  milk (120 mL)
  • ½ teaspoon  pepper
  • ½ teaspoon  salt
  • 1 lb  cooked sausage (455 g)
  • 1 cup  shredded cheese (100 g)

GRAVY

  • 4 tablespoons  butter
  • 4 tablespoons  flour
  • salt, to taste
  • pepper, to taste
  • 2 cups  milk (470 mL)

Preparation

  1. Cut each biscuit into 8 pieces. Set aside.
  2. In a bowl, mix the eggs, milk, pepper, and salt. Set aside.
  3. For the gravy: melt the butter in a saucepan, over medium heat. Stir in flour, salt, and pepper, and slowly add the 2 cups of milk.
  4. Increase to medium-high, bring to a simmer, stirring until gravy is thickened.
  5. In a greased 9x13 (22x33 cm) glass baking dish, layer the biscuits, sausage, cheese, egg mixture, and gravy.
  6. Bake at 350°F (180°C) for 35-45 min, until the eggs on the bottom are cooked.
  7. Enjoy!
