Cherry Pie Bars Recipe

Ingredients List
CRUST

  • 2 cups almond flour
  • 2 tbsp tapioca flour
  • 1/4 cup grass-fed butter OR coconut oil*, melted
  • 1/4 cup pure maple syrup or raw honey
  • 1 teaspoon vanilla
  • 1 teaspoon sea salt
FILLING
  • 4 cups pitted cherries, halved
  • 1/3 cup maple sugar
  • 1 tablespoon arrowroot
  • 1 teaspoon vanilla

CRUMB TOPPING
  • 1 cup almond flour
  • 1 tablespoon coconut oil or grass-fed butter
  • 1 teaspoon vanilla

 Directions

  1. Preheat oven to 350
  2. Line an 8x8 baking dish with parchment paper
  3. Combine crust ingredients and press into the bottom of the pan
  4. Bake for 10 minutes
  5. While baking, combine filling ingredients into a saucepan and bring to a boil
  6. Reduce heat and mix often- until filling becomes thick, cherries become soft, and cherry sauce thickens
  7. In a bowl mix together crumb toppings
  8. Pour filling onto base and drop crumb topping across the top
  9. Bake for 20 minutes
  10. Let cool completely before cutting and serving
  11. Store in refrigerator
