VANILLA CUPCAKES WITH BERRY BUTTERCREAM FROSTING
It wasn’t too long ago that I was invited to a Girls Night Out at a friend’s house. It wasn’t the typical GNO because the host had decided to do things a little differently. She had just gotten a new cookbook and wanted everyone to pick a recipe, make it and bring it to her home for everyone to try. Sounded like a good idea to me!!
As I looked at the book, I wasn’t sure if I should pick a savory or a sweet recipe but ended up trying some Homemade Vanilla Cupcakes. I mean – you really can’t go wrong with cupcakes. Am I right?! I picked the recipe mostly because the berry frosting it came with looked phenomenal. The bad news was, the cupcakes and frosting looked like a lot more work than I was hoping for, so I ended up scratching the entire recipe and coming up with my own thing. WHOOPS!! I just didn’t realize the recipe called for so many steps, and I wanted it to be more simple knowing I would eventually be sharing it with y’all.
The end result ended up being amazing. The main reason? The cupcakes are beautiful!! With a delicious berry buttercream frosting and topped withs strawberries, blueberries, raspberries and blackberries they looked almost too pretty to eat but were easy to make and so delicious. With Spring around the corner, I think you’ll want to try these amazing cupcakes because they were a hit at the GNO and with the entire family.

INGREDIENTS
- 1/2 cup blackberries
- 1/2 cup strawberries
- 1/2 cup blueberries
- 1 1/2 cup butter (3 sticks) softened
- 6 cups powdered sugar
- fresh berries (blackberries, strawberries, blueberries and raspberries) for topping
INSTRUCTIONS
- Begin by pureeing blackberries, strawberries and blueberries. Pour in a bowl and set aside.
- Add butter, powdered sugar and ½ cup of berry puree to a mixing bowl. Blend until smooth. Add more or less of the puree depending on the thickness of the frosting you'd like.
