DIABETIC LASAGNA RECIPE

Get ready to drool because this amazing Diabetic Lasagna Recipe is delicious, creamy, meaty and so easy to make. You’ll notice that a few ingredient swaps make this lasagna lower in fat, calories, sugar, and salt.

I got a few emails last month regarding diabetic dishes so I decided to do a little research and came out with this delicious Diabetic Lasagna Recipe. I used ground turkey breast instead of beef, I also used part skim mozzarella cheese, fat-free ricotta cheese, and whole wheat pasta.


These changes made a difference in calories and fat, but definitely not on flavor. My husband and mother in law had no idea! They loved it and devoured it. Serve it with a nice green salad on the side and you have an easy and delicious full meal.

You can make this Diabetic Lasagna Recipe in advance and just bake off at the last minute, you can also freeze it before baking and it goes straight from the freezer to the oven. Perfect for last minute guests or for weekly meal planning.

Ingredients

  • 1 1/2 lbs ground turkey breast
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 28 oz can of crushed tomatoes with NO SALT ADDED
  • 3-4 leaves basil chopped
  • 1 teaspoon dried oregano
  • 9 sheets of Whole Wheat Lasagna Noodles
  • 15 oz fat-free ricotta cheese
  • 1 egg
  • 2 cups part skim mozzarella cheese shredded
  • 2 teaspoons olive oil
  • Salt + Pepper

Instructions

  1. Preheat oven to 350 degrees Fahrenheit
  2. Cook noodles according to package instructions*
  3. Drain and place in cold water to stop the cooking process
  4. In a large skillet, heat the olive oil
  5. Add the onions and saute until softened
  6. Add garlic, 1/2 teaspoon of oregano and half of the basil
  7. Add the ground turkey and cook while breaking up the big pieces into little ones
  8. Drain excess liquid and add salt and pepper
  9. Add the tomatoes and cook until the mixture starts boiling. Remove from heat
  10. In another bowl, mix the ricotta cheese, egg, salt, pepper and the other half of the basil
  11. Drain noodles
