Low Carb Pinwheels with Bacon and Cream Cheese
Before I share my low carb pinwheels recipe, I have a story.
I spend my day-to-day with my children determined to scare them out of their wits; I figure it’s payback for all of the complaining that I must endure. At times I will I jump out at them from behind a door.
Or I will yell “boo” while standing quietly next to them. And it works. Every time. And their attempts at retribution always end in failure. At least they did until the other day. And, of course, the one time one of them is successful, is when I happen to be carrying a cup of water.
These Bacon Cheddar Ranch Pinwheel appetizers are the ultimate party food! So. We made it back from the waterpark all in one piece. Hooray! And…believe it or not…we had fun! I’m always a bit skeptical, since waterparks aren’t totally my thing…but at the end of the day, you really can’t beat a little time away.
Because even though we spend a lot of time together at home, time away is just different. It looks different, it feels different, and it brings out different sides in people. Some good, some bad, and some just downright funny.
I guess that’s what 3 days of too much sugar, not enough sleep, and all the swimming you can handle will do to people! And by people, I especially mean Nora. And it makes sense…since Nora is constantly trying to keep up with her big sisters in their bedtimes, their sugar consumption, and their bravery at the waterpark. Needless to say, by the end of the trip, we had one very over tired 5 year old who was definitely giving us a run for our money.
“Boo!”
And, soaked.
She got me. And I ended up covered in water. She was so terribly proud of her efforts but was polite enough to apologize for the water. Although I know I will never live that moment down.

Ingredients
- 3 ounces cream cheese, softened
- 2 tablespoons finely chopped onion
- 1 teaspoon 2% milk
- 1 tube (8 ounces) refrigerated crescent rolls
- 5 bacon strips, cooked and finely chopped
Directions
- Preheat oven to 375°. In a small bowl, mix cream cheese, onion and milk until blended. On a lightly floured surface, unroll crescent dough into one long rectangle; press perforations to seal.
- Spread with cream cheese mixture; sprinkle with bacon. Roll up jelly-roll style, starting with a long side; pinch seam to seal. Using a serrated knife, cut roll crosswise into twenty-four (1/2-inch) slices. Place on ungreased baking sheets, cut side down.
- Bake 12-15 minutes or until golden brown. Refrigerate leftovers.
