I love cooking chicken thighs – they are so easy to handle, and always come out moist and juicy. Can’t really go wrong with this cut of meat. You’ll love this simple recipe – perfect for a quick, weeknight dinner, and very budget-friendly too!
Often, chicken thigh recipes involve baking the thighs in the oven, but here I am browning the chicken in a large skillet on the stove top, then add honey-lime mixture to the same skillet and let the thighs cook in its own juices on lower heat for about 20 minutes. During the cooking process the chicken thighs release their juices which get mixed in with the honey-lime mixture to produce really delicious sauce which you will then drizzle over the chicken before serving. You can also drizzle these pan juices over a side dish, such as rice. YUM! So because I buy my chicken in bulk at Costco I always have chicken on hand. So I am always trying to create new and delicious meals. The great thing about this Honey Lime Chicken is that I had all of the ingredients on hand. And it only takes a few ingredients to make the flavor of this chicken amazing!

You have the glossy, lacquered, perfectly charred and baked chicken skin, with the meat bursting with the chicken juice. You can also make the chicken with bone-in chicken thighs.

Ingredients
- 1 lb chicken thighs deboned, skin-on
- 2 cloves garlic minced
- 1 heaping tablespoon honey
- 1 tablespoon soy sauce
- 1 tablespoon lime juice
- Pinch of cayenne pepper
- Pinch of salt
- Chopped parsley
- Lime wedges
Instructions
- Preheat the oven to 400F.
- To debone the chicken thighs but keep the skin on, please refer to this video and post for the step-by-step. The skin makes this recipe extremely delicious.
- How to debone chicken thighs.
- Combine the chicken thighs with garlic, honey, soy sauce, lime juice, cayenne pepper and salt. (You may double the marinade if you want it to be more "saucy"). Stir to combine well. Transfer the chicken and the honey mixture to a baking sheet lined with aluminum foil. Cover the chicken with aluminum foil to prevent burning.
- Bake the chicken for 20 minutes, or until cooked. If the sauce pools at the bottom of the foil, spoon and brush the sauce over the chicken. Broil the chicken for 1 minute or until the chicken skin is charred. Remove from heat, garnish with parsley and serve immediately with some lime wedges.
- Recipe Notes
- If you use boneless and skinless thighs or chicken breasts, please take note that your chicken will look white as there is no skin and the broil function won't char the meat and make it dark. Double the quantity of the marinade (honey, lime, cayenne pepper and salt) for stronger flavor if you like. You may also make this recipe on a skillet or cast-iron pan on medium heat. Please make sure that you keep turning the chicken if you cook on the skillet or pan as it might get dark very quickly because the honey. You may also grill the chicken on an outdoor grill.
