Sweet Potato Casserole Bread Pudding Recipe

During a conversation with my friend the other day about Thanksgiving side dishes, she mentioned that Sweet Potato Casserole is her favorite. When I replied that I had never had that before, she kind of looked at me like (as we say here in Missouri) “a deer in headlights.”



To create this gloriousness, we just used my recipe for bread pudding, and added a touch or two, to create the Sweet Potato Casserole Bread Pudding.

Ingredients

  • 6 slices stale bread
  • 3 Tablespoons butter 1 Tbsp + 2 Tbsp
  • 1 can sweet potato pie filling
  • 1 cup heavy cream
  • 1/2 cup white sugar or omit if lightly sweetened version is preferred.
  • 1 cup milk
  • 4 eggs beaten
  • 1 teaspoon vanilla extract
  • 2 cups miniature marshmallows

Instructions

  1. Preheat oven to 350 degrees, and use 1 Tablespoon of butter to coat the inside of your 8 in. square baking dish.
  2. Break your bread into the buttered baking dish.
