Coconut Almond Cake Roll Recipe

This almond coconut cake roll is such an easy recipe to make, and it tastes phenomenal.  With five kids, I really don’t have time for dessert recipes that take a whole afternoon to prepare. This roulade, on the other hand, is not time-consuming at all.

This recipe was inspired by the candy Almond Joy and that really is what it tastes like in every bite. You have the chocolate, the coconut flakes, the almonds and to top it off – a delicate light cream. So perfect!I

I love the homemade chocolate layer that takes this cake over the top. I mean, who doesn’t love chocolate!?! The light chocolate layer is such a great compliment to this coconut cake roll

This coconut roulade is not overly sweet but sweet enough to satisfy that dessert craving. The cake is perfectly balanced in every bite. This cake roulade is great to make it you are just looking to spoil the Mr. It’s also just as amazing to prepare for a ladies get together and is just as wonderful for family gatherings. You really can’t go wrong with this recipe.



The kind of batter used for this roll is a sponge cake (aka biskvit). Biskvit is a popular cake batter used in the Russian and Ukrainian kitchen. There are so many ways to bake and prepare the biskvit batter and just as many ways to assemble and decorate it. The classic recipe is made with eggs, sugar and flour. I tweaked my recipe to add baking powder and sour cream. Instead of beating the sugar and eggs for 20 minutes, my method is much quicker. Simple ingredients with outstanding results. Ingredients
Cake-

  • 5 eggs
  • 3/4 cup sugar
  • 1 Tbsp sour cream
  • ½ tsp baking powder
  • 1 cup all-purpose flour
  • Chocolate layer-
  • 4 Tbsp butter
  • ½ cup sugar
  • 3 Tbsp cocoa
  • 3 Tbsp half and half

Cream-

  • 1 8 oz cream cheese
  • ½ cup sugar
  • 1 cup heavy whipping cream
  • 3/4 cup sliced almonds
  • 1/2 cup sweetened coconut flakes

Instructions

  1. Preheat oven to 355°F. Line baking sheet with parchment paper. Spray with baking spray and lightly dust with flour. Set aside.
  2. Spread sliced almonds on a small baking sheet. Spread coconut flakes on a baking sheet. Bake 5-7 minutes until golden in color. Set aside to cool.
  3. Separate egg whites from egg yolks in two bowls. Beat egg whites on high speed for 2 minutes, until whites form soft peaks. Slowly, add sugar and beat another 2 minutes until stiff peaks form.
