HEALTHY RECIPES: Baked Parmesan Asparagus Fries

Baked Asparagus Fries are a healthier alternative to regular fries. Asparagus stalks are coated in panko bread crumbs and parmesan cheese and baked until crispy.

These days I’m all about vegetable fries. And I especially love baked vegetable fries. They satisfy my craving for fries without all the guilt.

I’ve been making so many baked crispy panko-coated foods that I started buying panko in bulk on Amazon.* It’s cheaper than buying multiple small boxes that only last for 1-2 uses.

I was lying in bed one night, tossing and turning, when I had this sudden craving for french fries. It didn’t matter where it was from – McDonald’s, Jack in the Box, Carl’s Jr – you name it. All I could think about was shoving those crisp fries right into my face. But since our Cabo trip is 2 1/2 weeks away, I opted out for something a little lighter and healthier with these asparagus fries.

Now I’ve quickly learned that these really are the best kind of “fries” ever. They’re so nutritious and healthy, and they won’t add on those extra carb weights. Plus, I skipped the deep fry and threw these bad boys right into the oven, keeping them nice and light, and baked them to absolute crisp perfection.

So the next time you have that sudden urge for those greasy fast food french fries, these asparagus fries are sure to fulfill those cravings. But be sure to have some self control when you make this because you’ll definitely want seconds and thirds!

Ingredients

  • 2 bunches asparagus ends trimmed
  • ½ cup gluten-free flour 1-to-1 blend
  • 2 eggs
  • 1 Tbsp milk almond milk or soy milk
  • 1 Tbsp olive oil
  • ½ cup Parmesan cheese
  • ¾ cup Panko bread crumbs gluten-free
  • ¾ tsp salt
  • ¼ tsp pepper
  • ¼ tsp paprika
  • Parsley optional
  • Parmesan cheese optional

Instructions

  1. Preheat oven to 425 degrees.
  2. In three separate bowls or pans (large enough to fit the length of the asparagus spears) place the following:
  3. Bowl 1: Gluten-free flour blend.
  4. Bowl 2: Whisk together the eggs, milk and olive oil.
  5. Bowl 3: Toss the cheese, breadcrumbs, salt, pepper, and paprika.
  6. Take 4-5 asparagus spears at a time and place them in bowl 1 (flour blend), dip them in bowl 2 (egg wash), and then coat them in bowl 3 with the Parmesan and breadcrumbs. Repeat with the remaining asparagus spears.
  7. Line two large baking sheets with parchment paper. Place coated asparagus spears evenly spaced out onto the baking sheets.
  8. Spritz asparagus spears with butter or coconut-flavored non-stick cooking spray and bake in the oven for 12-14 minutes.
  9. Halfway through baking, flip spears and return to oven until they reach a nice golden brown.
  10. Sprinkle asparagus spears with additional Parmesan cheese and parsley. Serve immediately and enjoy!
