Red Velvet Cake Mix Cookies

I’ve made a lot of red velvet recipes and shared them on the blog – but today I’m making the easiest, most fail proof recipe ever – red velvet cake mix cookies. You can make a batch in under 30 minutes and you only need 4 ingredients. They turn out soft, chewy, and a little gooey with a delicious red velvet flavor and tons of chocolate chips.

Everyone loves red velvet – but getting the perfect red velvet flavor can actually be pretty daunting. You need that mellow hint of chocolate, slight tanginess, and beautiful bright red color. Perfect red velvet recipes can actually be pretty tricky, because if you get things even a little off you can end up with a really bland baked good or a pretty ugly red color.


Can I tell you a secret?  I love to bake, but every now and then I am just not in the mood to spend a long time in the kitchen or I just don’t have time.  So when I need a quick and simple dessert, I love to use a box of cake mix to whip up a batch of cookies.  The wonderful thing about this recipe is that the cookies do not turn out cakey at all, they taste just like a regular cookie.

Every single time I make these no one has a clue they were made with a cake mix.  And I’m totally okay with not telling my secret.  Well, I guess I’m telling that secret now.

And that’s why these red velvet cake mix cookies are the perfect option. You end up with a delicious red velvet flavor, tons of white chocolate, and a beautiful bright red color every time because we’ve taken all the guess work out it.

These cookies are as simple as mixing together a box of cake mix, some oil, a couple of eggs, and your favorite mix-ins in one bowl.  I decided to use a red velvet cake mix in these cookies, since Valentine’s Day is right around the corner.  I really love Duncan Hines cake mixes for this recipe, the 16.5 ounce box is the perfect size.  You can also mix in whatever you like into these cookies.  I love white chocolate chips, but semi-sweet or dark chocolate would be delicious as well.

I’ve also found that there’s really no need to even chill the dough for these cookies.  That’s right, these cookies bake up super thick without chilling the dough.  And since they are made with oil, you don’t even have to wait for your butter to soften.

Ingredients

  • 1 box red velvet cake mix
  • 2 large eggs
  • 1/2 cup canola oil coconut and vegetable oil work too
  • 3/4 - 1 cup chocolate chips

Instructions

  1. Preheat oven Bake at 350 degrees F (175 degrees C).
  2. Mix together cake mix, eggs and oil in a large bowl until well combined. Stir in chocolate chips.
  3. Scoop dough with cookie dough scoop (or by the tablespoon) and set on ungreased cookie sheets.
  4. Bake at 350 degrees F (175 degrees C) for 10-12 minutes.
