Loaded Cauliflower Bake (Easy Paleo Casserole Recipe)
Before I switched over to a paleo diet, I used to consider potatoes as the most versatile vegetable around. Nowadays though, that title has definitely switched over to cauliflower. It has so many incredible uses for anyone who is on a paleo diet. It can be processed into rice, made into a dough-like consistency to make paleo-friendly breads or pizzas, and in the case of this recipe, used as a replacement for mashed potatoes to make a delicious loaded cauliflower bake. This cauliflower bake is completely paleo-approved, using arrowroot flour, almond milk, and homemade paleo mayonnaise along with garlic for even more great taste.

Ingredients
- 1 medium cauliflower, cut into florets
- 2 cloves garlic minced
- 1 ½ tbsp olive oil
- 1 cup almond milk
- 1 ½ tbsp arrowroot flour
- 1/3 cup paleo approved store-bought or homemade mayonnaise
- 4 bacon slices, cooked and crumbled
- 1 tbsp chopped parsley
- salt, black pepper to taste
Directions
- Preheat oven to 350°F.
- Blanch cauliflower in a large pot of boiling water for 2 minutes.
- Drain well and set aside.
- To make the sauce in a skillet heat the olive oil over medium heat.
